I started to ask when I saw some ads about eco pans and green cookware in the newspapers. How are these different from our old reliables? Or are they really as good as we think they are?

Facts we should know about:

Heat causes materials to be more reactive.

Stainless steel, glass, and enameled cast iron are good heat conductors and remain chemically unreactive or inert even in high temperatures.

Acids in food heightens reactions with the metals.

Aluminum and the specially-coated non-stick cookware, on the other hand, leach toxic substances and release toxic fumes in very high temperatures.

Some aluminum and copper cookware are coated with stainless steel to make them food safe even in high heat situations.

What dangers do these materials pose, if indeed, they do?
